Using light coconut milk is an easy way to cut down the POINTS value of a laksa without compromising on taste. Enjoy!
INGREDIENTS

100 g cooked cellophane noodles
2 tsp fresh ginger, grated
40 g Asia@Home Paste, Laksa, (2 tbs)
3/4 cup light coconut milk
4 whole stock cube, chicken or vegetable, to make 4 cups stock
400 g raw/green king prawns without shell
1 tbs fresh lime juice
6 individual shallots, sliced
2 tbs fresh coriander

Instructions
Cook cellophane noodles according to packet directions. Divide amongst 4 bowls and snip a few times with scissors to cut into manageable lengths.

Place the ginger, laksa paste, coconut milk and stock in a saucepan and bring to the boil. Add the prawns and simmer uncovered for 5 minutes then stir in the lime juice.

To serve, ladle the laksa over the noodles, evenly distributing the prawns. Scatter with the green shallots and coriander.

Notes
This is not suitable for freezing.
