Chiva-Som's vegetarian miso soup recipe, as seen on Channel 9's Celebrity Overhaul series. This quantity serves four people, has 70 calories and 0.7g of fat.
INGREDIENTS

1.5 tbsps miso paste
600ml vegetable stock
1 small carrot
1 small daikon white radish
8 pieces fresh shiitake mushrooms
50g firm tofu
2 spring onions








METHOD

Combine the miso paste with the vegetable stock and heat through. Add the shiitake mushrooms and simmer. Finely shred the white radish and carrot

Cut the tofu into 1cm cubes and add with the vegetables to the simmering soup base and cook for 1–2 minutes only.

Finely shred the spring onions using equal quantities of the green leaf and white bulb. Place in serving bowls. Pour the soup over the spring onions in the serving bowls and serve.

NB: the miso paste is salty, so no additional seasoning is required.
