Home-made lamb and vegetable soup

A recipe for home-made lamb and vegetable soup
INGREDIENTS

2 lamb shanks
2 large turnips
2 large parsnips
2 large swedes
2 large onions
4 sticks celery (optional)
4 large carrots
2 cups of rice or barley
METHOD


  • Place the shanks in a large cooking pot of water and start to boil.

  • Cut up the celery into 1cm pieces
  • Grate the vegetables or put through a food processor, onion included.

  • Put all in with the shanks.

  • Bring to the boil, then simmer for a couple of hours.

  • Add the rice or the barley in the last 15/20 minutes of cooking.


Meat from the shanks can be taken off the bone or left as is — it's up to you. Crusty bread also goes really well with this soup for a meal in itself.
