A recipe for healthy wholemeal rock cakes.
If you're going to have a sweet treat, you may as well make it as healthy as possible, and this recipe from ninemsn Health reader Carina Hicks ticks all of the boxes. Wholemeal flour adds some fibre that's crucial to our nutrition, and the dried fruit also bulks up while providing a sweet taste. Light margarine and skim milk cut down on the 'joules, and removing the egg yolks cuts down on calories and dietary cholesterol.
INGREDIENTS
2 cups wholemeal self-raising flour (you could use 1 1/2 cups flour and 1/2 cup bran or rolled oats)
1 cup mixed fruit
1/4 cup sugar
1/2 cup skim milk
2 egg whites
A sprinkle of cinnamon
2 dessertspoonfuls of melted "light"margarine
METHOD
Pack a few of these into your kids' lunchboxes each day and get them off to a flying start.
Mix all of the ingredients together and drop dessertspoonfuls on to lightly sprayed trays. Sprinkle a small amount of sugar on top of each one. Cook in oven at 180° for approximately 10-12 minutes.
These are delicious served warmed or can be eaten cold. They usually keep for a week in an airtight container.
