Fantastic tomato tuna
A recipe for tomato tuna.
This is a fantastic tomato tuna recipe that never fails, even with those who avoid canned tuna. Sent in by reader Kathie Mackay, she says that she always gets comments when she takes the leftovers in to work!
INGREDIENTS
420g can tuna
410g can diced tomatoes
Red capsicum
Head broccoli
1 medium onion
6 slices low-fat cheese
Sprinkle oregano
Salt and pepper to taste
Olive oil
2 cups of your favourite pasta (rice can be substituted if you prefer)
METHOD
Put a pot of hot water on to boil. When it boils add the pasta. Heat a tablespoon of olive oil in a frying pan and sauté the onion. Add the capsicum and broccoli and stir-fry for a minute. Add the tuna, tomato, oregano and salt and pepper to taste. Stir every two-three minutes. Place cheese slices on top about two minutes before serving.
This recipe can be changed around with different vegies, spices and sides to keep it interesting every week.
