Fantastic tomato tuna

A recipe for tomato tuna.
INGREDIENTS

420g can tuna
410g can diced tomatoes
Red capsicum
Head broccoli
1 medium onion
6 slices low-fat cheese
Sprinkle oregano
Salt and pepper to taste
Olive oil
2 cups of your favourite pasta (rice can be substituted if you prefer)

METHOD

Put a pot of hot water on to boil. When it boils add the pasta. Heat a tablespoon of olive oil in a frying pan and sauté the onion. Add the capsicum and broccoli and stir-fry for a minute. Add the tuna, tomato, oregano and salt and pepper to taste. Stir every two-three minutes. Place cheese slices on top about two minutes before serving.

This recipe can be changed around with different vegies, spices and sides to keep it interesting every week.
