Chiva-Som's Chinese stir-fried veal recipe, as seen on Channel 9's Celebrity Overhaul series. This quantity serves four people, has 280 calories and 4.7g of fat.
Trim and slice the veal into thin slices, then put back into the fridge. Arrange in separate bowls the ginger, garlic, shiitake mushrooms, spring onions and onions. Roll chop the red chillies with most of the seeds removed (or leave all of the seeds in for added spiciness). In a bowl mix the wine, soy sauce and cornstarch.
Heat a wok or large skillet and when hot, add the onions, garlic and ginger and toss. Add about 30ml of the vegetable stock.
Continue to add the ingredients in the following order: shiitake mushrooms, veal, remaining vegetable stock and chillies.
Once the stock starts to evaporate a little and the colour begins to brown, add the cornstarch mix, stirring the contents of the wok to avoid lumps. This will thicken the liquid so that it coats the back of a spoon. Remove into a serving dish and serve with the steamed brown rice.
