White bean & capsicum salad


Zesty oranage and avocado salad
INGREDIENTS

• 1-2 tbsp virgin olive oil
• 400g can white beans, rinsed and drained
• 1/4 cup marinated char-grilled capsicum, chopped
• 2 tbsp Gourmet Garden Parsley
• 1 tsp Gourmet Garden Basil
• 2 tbsp finely diced or sliced red onion
• 1 tsp drained baby capers (optional)
METHOD

Serves 2 as a salad

Step 1
Place beans, capsicum, Gourmet Garden Parsley & Basil, onion and capers in a bowl. Add 1-2 tbsp oil; toss to combine. Season to taste with salt and black pepper.
Step 2
Serve as a main dish salad on baby cos leaves with toasts, or spoon beans onto toasts for party nibbles.
