Peppermint bubble bar

INGREDIENTS

MAKES: 16


BASE
2 x 40g peppermint bars (Darrell Lea)
4 tablespoons (60g) Flora Light margarine
1 tablespoon golden syrup
3 cups rice bubbles
cooking spray

ICING
1 1/4 cups icing sugar
2 tablespoons cocoa
2 tablespoons skim milk
1/4 teaspoon peppermint essence
METHOD

Roughly chop peppermint bars then place bars, margarine and golden syrup in microwave
safe bowl and melt on high for 2 minutes, stir well and microwave a further 1 minute, beat mixture until smooth. In a large mixing bowl add in rice bubbles, pour in melted chocolate mix and stir together well until rice bubbles are all covered with chocolate mix. Coat a slab tin with cooking spray and press mixture into tin evenly. Refrigerate. Once cold make icing. In a small mixing bowl add all icing ingredients and mix together well, (if too thick add a little more milk). Spread icing over base and refrigerate. Once set cut into 16 slices.
